Residual chitosanase activities at various pH and temperatures under different time points. For pH, activity was measured at 37°C for 15 min (a) and for temperature, at pH (7.5) for 15 min (b). Results for chitosanase stability were expressed in percentage of residual activity as a function of pH and temperature values and time points, considering a 100% activity for chitosanase at initial time (t = 0)
